HELLO!!

I am thinking of making my own bread -
does anyone have any helpful tips please!?!?

With or without machine, Carol?
I only use a machine as I've never had good results from making it 'by hand'.

Well, I have a recipe I've been using for about 20 years. It's the simple way to make bread, so if you are looking for something fancy, this recipe isn't. I know in England the meaurments are differ, I don't know how to change them for you...sorry dear!

Makes two loaves
6 to 6 1/2 cups all-purpose flour
3 Tablespoons sugar
2 packages yeast(1/2 oz,(14G)
2 Tablespoons salt
1 1/2 cups water
1/2 cup milk
2 Tablespoons butter

In large bowl, combine 4 cups flour, sugar, yeast and salt. Heat water, milk and butter until very warm (125* to 130*F); stir into dry ingredients. Stir in enough remaining flour to make soft dough. Knead on floured surface until smooth and elastic, about 8 to 10 minutes. Cover, let rest 10 mintues. Didide dough in half; roll each to 12-x7-inch rectangle. Roll up from short ends as for jelly roll; pinch seams and ends to seal. Place seam sides down, in 2 greased 8 1/2- x 4 1/2 loaf pans. Cover; let rise in warm, draft-free place until doubled in size, about 30 to 60 minutes.
Bake at 400*F for 30 minutes or until done.
To make Whole wheat bread: Replace 2 cups all purpuse with 2 cups whole wheat flour.

I have made this plain, and I also make it with raisins, cinnomon and nuts.
Just add them into your dough right before kneading.

Thank you ladies for your responses.
Elizabeth - we do have a breadmaker but it's quite old now and isn't the greatest and unfortunately we quite often suffer sunken bread now. So I am thinking of trying by hand. (being brave!!)
Rayanne - thanks for the recipe - I'll give it a try and let you know how it turns out. I do have measuring cups and a friend from the USA gave me some measuring spoons.
So however my bread turns out I shall show a picture. Will be having a go on Saturday!!
